We hope to share a recipe a week that we've tried and enjoyed. This was put together by one of our own while experimenting with ways to eat more kale. It's pretty tasty!
KALE...YUM!
What you need:
1 Tbsp of coconut oil
2 Heaping handfuls of kale
1 Large tomato
3 Medium sized mushrooms
4 Olives stuffed with garlic, sliced
1 Handful of pecan or walnuts
Instructions: Place coconut oil in sautéing pan over medium heat. Let coconut oil turn to liquid and then add kale. Chop tomatoes, mushrooms, olive and pecan and add to pan. Cover and cook until kale is soft and mushrooms are sautéed. Remove from heat and serve with a side of boiled eggs for breakfast or 4oz. of organic grass-fed meat of your choice for dinner.
I made this and a smoothie for breakfast over the weekend. It was so good and I felt great afterwards too!
