Spaghetti Squash Spaghetti - Gluten free!

This is a great gluten free recipe that can be made in big portions for dinner or lunches for the week. Even if your not a big squash fan try this recipe at least once. You will be surprised at how good it is!

Ingredients:

1 spaghetti squash (small one feeds 2)
1 jar of organic spaghetti sauce (you can also make your own)
1 lb of hamburger

Instructions: 

Preheat the oven to 375. 
Cut the spaghetti squash in half and scoop out all of the seeds and meat with a spoon. Place the halves with the open side down in a baking pan with water that covers the bottom of the pan. Place in oven and set timer for 45 minutes. (If using a larger squash I would set the timer for 1 hour.)

Brown your hamburger in a skillet, drain and add sauce and burger into a big pot. Let the mix simmer until the squash is finished.

Once the spaghetti squash has finished cooking, take out of the oven and let it sit 5 minutes. It will be hot! Once cooled, use a fork to pull the noodles from the skin. There is no special technique just start scraping!

Mix the squash noodles in with the sauce and you are done! (See pictures below)

Peppers and mushrooms were sautéed in coconut oil and then added to the sauce for more flavor
use fork to remove squash noodles

Dinner is served!
